Spicy Tahini Summer Dressing

Serves 1-2

This Tahini dressing is delicious as dip or as dressing! For a while, I ate it every night on a huge salad of a head or two of romaine with cilantro and italian parsley mixed in with a peeled cucumber and a chopped red pepper. The sunflower seeds mixed in with the dressing make sure the nuts don’t all fall to the bottom of the bowl!

Ingredients

  • 2 Lemons
  • 1½ cloves Garlic, chopped or garlic pressed
  • 2 tablespoons Raw Tahini
  • 2 pinches Sea Salt
  • 1 dash Cayenne Pepper
  • 2 tablespoons Cold-Pressed EVOO
  • 1 tablespoon Water

Preparation

Mix all ingredients together and stir until somewhat smooth. I like mine extra citrusy and garlicky, so I add more of the lemons (sometimes adding a lime instead) and the garlic.

**If you like added sweetness, try adding a tablespoon or two of raw honey, agave or stevia. Feeling salty? Try adding some Nama Shoyu!

You reference sunflower seeds in your opening description paragraph, but there is not reference to them in the ingredients list or preparation section. ???

Oops. I usually add sunflower seeds to the dressing before I pour it on my salad for extra CRUNCH!

And EVOO stands for Extra Virgin Olive Oil
