Tangy Guacamole

Serves 1, yet you'll want more! :o)

Tangy, tasty and quenchingly AMAZING! Especially when dipping something slightly salty into it!

Ingredients

  • 1 Avocado
  • 1 Handful of Soaked Cashews, (soak overnight)
  • 1 sprinkle Celtic Sea Salt
  • 1 Green Onion Stalk, (diced)
  • 1 Lemon
  • 1 Lime
  • Water

Preparation

Peel and pit the avocado and place it in the blender with the handful of soaked cashews. Sprinkle in the moist celtic sea salt. Add in a good amount of the juice from the lemon and the lime – maybe even a little pulp! Add just a touch of water, to get the blender going. Blend all together until slightly chunky (keeping it slightly chunky seems to allow the ingredients to breathe) or blend it together until it’s smooth – whichever you prefer! Dice and fold in the entire green onion stalk. YUM. Taste-test it. Adjust ingredients to desired taste. I like to adjust it so that it does not taste like avocado, but so that it tastes like tangy bliss! (Keep extra ingredients on hand, because I keep adding/topping it off with more of everything!)

This dish will not age/discolor, due to the lemon/lime juice!
