Veggie Chili
2-3 bowls
A chunky chili with veggies and no beans. Very tomato-ey with a nice crunch from the peppers. Smooth and creamy from the avocados.
Ingredients
- 2 Medium Tomatoes
- ½ Avocado
- ¼ cup Sundried Tomato, soaked until soft
- 1 clove Garlic
- 1 Handful of Cilantro
- 1 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- ½ teaspoon Salt
- ½ Red Pepper, diced small
- ½ Green Pepper, diced small
- ¼ cup Green Onion
- ½ Avocado, diced large
- ½ Tomato, diced
- 1 Handful of Cilantro, chopped
- 1 tablespoon Olive oil
- 1 teaspoon Lime Juice
- 1 dash Salt to taste
Preparation
Puree tomato, half an avocado, sundried tomato, garlic, and one handful of cilantro in a food processor until pretty smooth. Blend in spices. I had to add a lot of chili powder to get this spicy, but be sure to taste as you add, chili powder may vary :) Dice peppers and green onion and put into a bowl. Add in puree and give it a good stir to blend. Chop the other half of the avocado, half a tomato (or a whole one if you wish) and some cilantro, and mix this in to the chili. Add olive oil and lime juice, stir that baby real good, add a little more salt if it pleases the palate, and you’re done! Bon Appetit!

ok so i made it tonight for dinner and if i could give it 10 stars i would! absolutely phenominal recipe!! it tastes like cooked chili but even WAY better. theres so much more flavor and its SO much more satisfying. defenitely one of the BEST raw food recipes around. this recipe is a sure fire way to curb a cooked food craving. it is THAT good. thank you soooo much for posting this starjen! did YOU make up this recipe? if so, you are a genius

Samilicious, it’ll definitely work with cayenne instead of chili powder, but make sure you taste as you add, so you don’t end up with a chili that’s too hot to handle! Leaving out the oil shouldn’t make too much of a difference, since there’s plenty of fat in the avocado. :d

I’m currently eating this and it is outrageously good. It’s my first ever raw dish, so I went into it expecting to have to add beans to it to make it tolerable, but I was so very wrong. I added mushrooms to it and skimped on cilantro due largely to the fact that I have none, but otherwise stayed pretty close to the recipe. Granted, the outcome doesn’t look nearly as delectable as the photo (which made me think to myself, “Great. This is going to taste just as bad as it looks”), but it is indeed phenomenal.

I am eating this RIGHT NOW :) Very good recipe. Unfortunately I do not have any sundried tomatoes so I tried to compensate by adding an additional tomato to the mix.I also pureed in some jalapeņo to give it more of a kick! oh, i also pureed half a cucumber in the chilli, and diced the rest in, it was amazing. Also, careful on the chilli powder, i dont know how potent all of yours are but i grind chillis myself and make my own,that kind of lapsed my memory while i was making it, and a tablespoon was crazy hot. so be careful. hahah

I tried it. I liked it. smile Shared some with my boss. He liked it. Shared some with my dad. He liked it. This was my first time using cilantro so I thought I was supposed to grab a handful and THEN chop it up. Obviously I ended up with way too much. Thank God you told us to taste as we stir stuff in…LOL Now I have all this leftover cilantro. I’m SO GLAD you shared this recipe. I can’t remember the last time I had chili. Made this about a month ago for my teenagers and they loved it! It is a new family fav. I used a friend’s home grown tomatoes last time and it was unbelievable! We like it spicy, so I add more chili powder. Thank you for the inspiration.
