Cacao Goji Hemp Smoothie
Serves 1
This is a good, basic superfood smoothie to get you going in the morning or pick you up in the afternoon!
Ingredients
- ⅔ cup young coconut pulp
- 8 ounces coconut water , (or more, depending on thickness preference and thickness of coconut pulp)
- 1 ounce hemp seed (about 1/4 cup), unsoaked
- ½ ounce goji berries (about 2 1/2 T), unsoaked
- 1½ tablespoons cacao powder
- ¼ of a vanilla bean (or 1/2 t vanilla extract)
- sprinkle Celtic Sea Salt
Preparation
Open the young coconut and drain the water into a bowl. Scoop out the young coconut pulp. Add young coconut pulp and water to the blender, along with the other ingredients.
Start blending on low, and with the blender running, scrape down the mixture. Increase speed to high, blend until smooth, pour into a large glass, and enjoy!

If you don’t have enough pulp, you can open up another young coconut, or you can use some dried shredded coconut, coconut flour or avocado to help thicken up the mixture. :)

That sounds sooo good :) I’ve made a similar one a few times myself. I’ve been wondering, in recipes that call for both coconut water and coconut meat, can coconut milk be substituted to the same effect? That’s what I have been doing, and the smoothies are delish, but now I am curious if using c milk instead of c water and meat gives a significantly different result…

Thanks for the kind comments! Yes, I think coconut milk will give a richer texture than coconut water. I believe coconut water is only about 10% fat. I’m sure it’s yummy either way, though! :)
