Tomato-Corn Salsa
Makes about 3.5 cups
A very fresh, very delicious version of salsa with corn. Put on top raw burgers, salads, tacos, or make some corn chips to scoop it up (I will be posting a corn-chip recipe soon)!
Ingredients
- 3 vine-ripe red tomatoes, diced
- 3 ears corn, kernels only
- ½ red onion, chopped or minced
- ½ sweet onion, chopped or minced
- 1 green onion, sliced thin
- 3 cloves garlic, minced
- 1 jalapeno (or more for hotness), diced fine
- fresh cilantro to taste, chopped fine
- 2 limes, juice only
- 2 tablespoons apple cider vinegar
Preparation
Mix all solid ingredients. Add cider vinegar and lime juice last and stir. Allow to marinate for a couple hours and taste. Add more lime or vinegar if necessary.
