Tomato Chutney
This chutney is great over greens or in this case cauliflower couscous. It is the perfect sweet, sour, spicy condiment. And it’s easy to make!
Ingredients
- 1 box grape tomatoes, 3 regular tomatoes would also work
- 4 dates
- 2 quarter sized pieces of fresh ginger
- 1 clove garlic
- 1 teaspoon mustard seeds
- ½ teaspoon ground cumin, or whole seeds
- dash cayenne pepper, or to desired heat level, I make mine pretty hot!
- salt to taste
- 1 teaspoon apple cider vinegar
- ¼ cup minced cilantro
Preparation
1. Process all ingredients, reserving half of the tomatoes and cilantro, until dates are smooth. Taste to check seasoning and adjust as necessary.
2. Add reserved tomatoes and cilantro and pulse until it has the texture of a chunky salsa.

cilantro is an herb kind of like parsley but with a different taste.. might also be called coriander.

badnews, I looked at your recipe posting, I guess you know it as coriander! If I had to guess, cilantro is the Spanish name for it, I am in Texas.
