Bittersweet Salad with Apples and Dandelion Greens
Serves 4
This recipe comes from Jennifer Italiano, owner of Toronto’s Live Organic Food Bar. It’s absolutely amazing and the bitterness of the dandelion greens is beautifully countered by the sweetness of the apples and creaminess of the dressing. Make sure to use a very large bunch of dandelions (I used about 5 plants, and wished I’d had more).
Ingredients
- 1 large bunch dandelion greens, stems removed, chopped
- 2 apples, cored and chopped
- ½ red onion, thinly sliced
- 1 cup raw tahini
- 1 cup fresh orange juice
- 2 tablespoons dulse flakes
- 1 tablespoon ginger root, grated
- ½ teaspoon cinnamon
- ½ teaspoon curry powder
- pinch salt
Preparation
In a large salad bowl, combine dandelion, apples and onion. Blend remaining ingredients in blender until smooth. Pour dressing over and toss gently. Allow salad to marinate at least 10 minutes, or up to 2 hours.
