Strawberry Rhubarb Shake
made enough for one hungry person or two normal people
I was inspired by the strawberry-rhubarb pie someone just posted in the recipe section. I have a rhubarb patch I’ve never picked yet until today, so it seemed like a great time to experiment with a new shake recipe!
We really loved it. I remember eating stalks of rhubarb dipped in sugar as a kid. This is MUCH nicer.
Ingredients
- 3 stalks of thin, fresh rhubard (or 1 of the big store bought stalks), chopped
- 1 cup frozen or fresh strawberries
- 4 fresh dates
- handful of macadamias or raw cashews
- dash of cinnamon
- agave to taste
- water just to cover it all in the vitamix
Preparation
whizz it all up in the vitamix and enjoy!

Oooh, I’m excited because I have some rhubarb in the garden and I thought it would be impossible to eat raw. I will give it a try soon.

miaculpa – this is FANTASTIC! It’s perfect. The smell was so nostalgic it almost made me cry. I even added some swiss chard to round out the meal and it was still amazing,so thank you!!
I also wanted to pass along an easy use for the leaves for those who are cutting it out of the garden – with your knife, slice off the leaves right there and use them to mulch around the plant. An old Vermonter taught me that.

i just made this. DELISH! i didn’t have cashews so I used almond butter and I threw in a few handfuls of spinach. so yummy!

Yum, I just tried this only I left out the dates and forgot the cinnamon but it is still delicious.

I have just finished enjoying this fabulous shake, what a taste sensation! An absolutely wonderful way to enjoy my fresh rhubarb. I didn’t have fresh dates, so substituted dry and found that this was sweet enough for me without adding any agave. I too forgot the cinnamon, but it was fabulous anyway. Thanks so much for sharing this.
