Creamy Tomato-Avocado Soup
Serves 1-2
This soup is creamy delicious and very comforting. I came up with it using what i had in the house. The miso gives it a nice touch so you don’t have to add too much salt. Enjoy!
Ingredients
- 3 medium tomatoes, Chopped
- ½ cup sun dried tomatoes, soaked
- 1 cup water
- ½ large aocado
- 1 clove garlic
- ¼ White onion
- 2 tablespoons Miso
- dash Sea salt
- ⅓ cup parsley
Preparation
Put all ingredients except salt, water, and sunflower seeds into the blender. Blend and Add water slowly until its as thick as desired. Add salt to taste. Garnish with parsley and sunflower seeds for a nice crunch.

Gorgeous! YUM! By the way, you have the miso entered twice – is this correct?

This is just delicious! I used a third of everything called for—except for water. I dumped in an entire cup without thinking, but it still tasted fantastic.

I’m confused…The recipe mentions sun dried tomatoes but not sunflower seeds, and then the instructions mention sunflower seeds…So did you mean sunflower seeds and not sun dried tomatoes, or sunflower seeds in addition to??
