Carob Fudge Delight

A great alternative to your traditional date square

Ingredients

  • 1¼ cups pitted dates
  • ¾ cup soaked raisins
  • 4 tablespoons carob powder
  • 2 cups soaked brazil nuts
  • 1 cup water
  • ½ cup flax seeds
  • ½ cup sunflower seeds
  • 1 cup walnut pieces
  • sprinkle hemp seeds
  • ½ sweet lime, juiced, optional

Preparation

Blend the dates, raisins, carob, Brazil nuts, sweet lime juice and water in a food proccesor or blender. Then mix in the seeds along with the walnut pieces. Spread onto a tray, sprinkle with hemp seeds, freeze and cut into squares.

You can sub 4 cups of hazelnuts for the brazil nuts.

This really sounds good. It reminds me of the brownies from Glaser Farms in Miami, except those don’t have hemp or flax seeds. They are delicious. I hope these are as good. Thanks for sharing!

I forgot to ask a few questions: What are sweet limes? How do the Brazil nuts process with the other ingredients? What I mean, it seems that it would be difficult to blend those ingredients to a uniformly blended mixture. Does it easily process? Can the walnuts and sunflower seeds be soaked and some of them blended into the mixture? What size/type of tray do you use?

You can blend the brazil nuts first with water in a food processor if you don’t have a strong blender, then add your dats, raisins and carob or you can sub raw cacao nibs. Sweet limes are similar to lemons/linmes however they don’t have that sour mouth puckering affect, they are rather sweet, like the name! All the seeds can be blended if you prefer a smoother consistency, I just like to have the nutty pieces in there. I can’t remember off the top of my head what size the pan is is, but it is non stick and about an 1 1/2 inches deep, and maybe 7×12?? I’ll have to check when I ge home and let you know.
