caponata
makes about 6 cups
the italian eggplant classic,gone raw
Ingredients
- 1 medium eggplant,peeled, 1/4"dice approx 4 cups
- 1 cup tomato, 1/4" dice
- 1 sweet bell pepper,i used orange, 1/4" dice
- 1 celery stalk, 1/4" dice
- ¼ cup red onion,or more to taste, 1/4" dice
- ¼ cup olives of choice,i used a mix of green and black, 1/4" dice
- 2 tablespoons capers,optional, not raw
- `````````````````````````````````````````````
- dressing:
- ½ cup sundried tomato, soaked
- ½ cup olive oil
- ¼ cup apple cider vinegar
- 2 tablespoons agave
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- 1 tablespoon dried oregano
- 1 clove garlic, or more to taste
- all organic if possible
Preparation
1.prepare dressing ingredients in magic bullet or blender.
2.pour over rest of ingredients,and mix well.
good right away or can be marinated several days in fridge.
note:shown pictured with caponata crisps ...
i also made “caponata poppers” cut mini sweet bell peppers(red,orange,yellow) in half,remove seeds,fill with caponata and top with fresh basil and a sprinkle of pine nuts(pignoli).small tomatos may be scooped out and stuffed ,too!
as mentioned below, i use the chopwizard with the dice blade to make this recipe:) it is available at kitchen stores and larger department stores at this time.

sometimes i make “not caponata”,replace the eggplant with 1 green squash,1 yellow squash and some mushrooms;)

This looks fabulous! In the world of cooked foods, I’m used to salting eggplant and letting it sit an hours before using it in a recipe to get the bitter taste out. I’m wondering how it tastes in this recipe w/o doing that? I love Caponata so can’t wait to try this.

hi nutritionmagician…im not sure if this is true,but i pick “male” eggplant.they have a shallow round indentation in its bottom as opposed to the “female” which has a deeper dash shaped indentation.i pick lighter eggplants ,weight wise, as they tend to have less (bitter) seeds.also, i find that the “bigger is better” theory is not true for eggplant! hope this helps;)

Made this this week using the small eggplant with purple striped skin-
not sure of the gender :). It was totally fabulous; I like it better than the cooked version b/c it’s so fresh tating and the eggplant wasn’t bitter at all. I think the small dice is part of what helps. hi!...glad you liked it!i know its silly to call them male and female, but thats how my mom taught me…i love the small dice,too, and it was really quick and easy to do because i used the “vidalia chop wizard”.

This is an awesome dish! The sauce is excellent and it tastes great! The egg plant with soak up any sauce it is matched with, and this soaks up the great-tasting sauce nicely. It is also a good dish that keeps will in the frige. The more it maranates the better it gets. I think you could also serve this as a wrap or in a whole green or red pepper. Thanks!!

This is very good and even better if left to marinate in the fridge for a day or two. I mixed left overs with kale and took it to work and this was a lovely salad. By today, the eggplant was nice and soft.

DELICIOUS! i used a little less agave, and some sea salt. also put it in the dehydrator for 2 hrs at 115F which brought out the flavors nicely. my non-raw friends couldn’t stop eating it.
