Red Pepper & Sun Dried Tomato Vinaigrette
A really lovely dressing good on anything! And it is SO beautiful to look at. Growing up in an Italian home, we had salad with Italian dressing EVERY night. I am partial to vinaigrettes and make a lot of them!
Ingredients
- 2 Red Bell Pepper, Soaked in hot water
- 3 Sun-Dried Tomatoes
- ½ cup Cold Pressed Olive Oil
- ½ cup Water
- ¼ cup Raw Apple Cider Vinegar
- 1 clove Garlic
- 2 tablespoons Honey
- Salt/Pepper to Tast
Preparation
- First, coarsely chop the red bell peppers and soak them in very hot water with the sun-dried tomatoes. Let them sit for 30 minutes to 1 hour.
When the veggies are done soaking, combine all ingredients in a blender and blend until creamy.
Tasted great on any kind of salad!

Great except I would use purified water to soak. Tap water is chemical alphabet soup.
