Sweet Chocolate Ice Cream

Makes 4 Servings

This ice cream is interesting and sweet. Of course, it’s not for everyday because it has nothing good for you, but it’s great if you’re looking for something lightly chocolate and yummy!

Ingredients

  • 2 pints Cold Water
  • 3 tablespoons Vanilla Extract
  • ½ cup Agave
  • ¼ cup Caoco Powder, (taste it and add more if needed)
  • Caoco Nibs

Preparation

Mix all the ingredients except the nibs until well blended (you can use a blender, but to save time and water, I just mixed it with a spoon for a while and called it good). Pour it into an ice cream maker and wait until thick balls of it form. Spinkle nibs over top and wa-la!

If you don’t have an ice cream maker, you can put it into a bowl in the freezer and every 10 mins mix it by hand and put it back in until it reaches the desired texture. You could also pour it into a shallow pan and freeze it until medium hard, then take a spoon or fork and scratch it off. After you get it all off, mix it so that it forms balls like it was never scratched!

Kelley, what a great idea!

I like this sorbet because it’s fat-free – a nice change from all the nut-heavy ices and desserts. But a little avocado would make it divine.

I’m going to try this tomorrow.

Yep, i want to make this and add blend in some coconut oil and perhaps some soaked cashews. I haven’t had a proper raw ice cream yet and with summer round the corner I would like to find out how to make a corker!

sweetpea, I am posting my Vanilla Ice Cream recipe soon and it might be your answer to making raw ice cream. Cashews are gross to me…..well all nuts are. lol But many like them.

The best thing about this is that it is coconut, nut free! So light! Yay! I will add this to my recipe box and my new breakfast box.

Wow….this came out really delicious. But it came out more like a slushy than ice cream. I would like that ice cream consistency, is this the consistency that everybody else got? I left it in the ice cream maker for like a half hour and I couldn’t leave it in anymore because the ice cream maker started to melt. Help??!!

RawKidChef…put the mixture in the freezer for 1 hour then put it in your ice cream maker (if it’s ice cream tub is totally frozen by then…must be frozen if you have a cuisinart type maker). I think freezing the liquid first really helps us to make ours thicker. I can’t wait to see your recipe too! :)

Thanks rawmama! Yes, I have a Cuisinart, and the ice cream maker bowl was frozen first, so that wasn’t the issue. I guess it depends on what ice cream maker you have. I will freeze it for an hour next time, thanks! Oh and yes, I will post the ice cream recipe soon.

throwing what in a vita-mix? The mixture before putting in an ice cream maker is liquid. You could use a vita-mix to blend the ingredients, that’s what I did. (Just make sure to cover the little opening where the pouring area is!!!).

Grassdude, well it can be good in moderation but most people eat too much of it so Sunshine was just saying that it’s not an indulgence to be had everyday. Yes, it is high in antioxidants but also high in fat.
