Peppermint Lemonade

serves 3

This is my favorite summertime drink! I was at a fair in 2007 and couldn’t find a single vendor with something raw until my boyfriend’s daughter asked for lemonade from the cart a few yards away. I watched the woman squeeze (gasp) real lemons into a cup and add sugar and water. Since then I’ve been making my own honey-sweetened version, and recently decided to try adding peppermint sun tea to it. This is just fabulous!

Ingredients

  • 5 lemons, Juiced
  • 2½ cups water
  • 1 cup peppermint tea, iced
  • 3 tablespoons raw honey or agave, to taste

Preparation

Juice 5 lemons with citrus juicer. Strain. Pour into a small pitcher or large glass jar. Add water, unsweetened tea, and honey. Stir and serve.

I fell in love with mint lemonade in Israel where it’s the norm to serve lemonade with mint. You can just add fresh sprigs of mint to the batch, too. I’m glad to see my favorite drink here!

So… does it do the chilling thing mint water does? I loved the mint water for beating the summer heat. You were right about the kale, so I’ll try this soon, too. Rob’s been ASKING for kale smoothies. (Sorry, should’a told you to sit first. LOL)
