Creamy Curried Butternut Soup
The amounts are approximate since I was kind of experimenting. I like the results. Nice & creamy tasting. :)
Ingredients
- ½ butternut squash, peeled
- 3 celery stalks
- 1 red delicious apple, cored
- ½ cup nut butter, [I used sunflower seed butter!]
- 2 huge handfuls of cilantro
- 2 huge handfuls of parsley
- 2 cloves garlic
- 2 tablespoons apple cider vinegar
- 2 tablespoons agave
- 2 tablespoons curry powder
- water
Preparation
Blend all ingredients until nice & smooth, adding water as necessary.
Chill.
Enjoy!
