cream cheese
about 1 cup
this was a total accident. it tasted EXACTLY like cream cheese to me. only, i HATE dairy, so there wasn’t exactly a party in my mouth. i figured someone who was missing it would be appreciative though. ;)
Ingredients
- ½ cup sunflower seeds, soaked
- ⅓ cup seaweed soaked in water, reserve liquid, use seaweed in something else
- 1 scallion (whole thing), chopped
- 1 garlic clove, chopped
- ¼ lemon (juice and pulp)
- 1 tablespoon raw ACV
Preparation
place all ingredients in a small blender (like the magic bullet) and whir till creamy. the two key ingredients here are the seaweed water and the ACV.
p.s. i don’t usually post recipes i wouldn’t eat, but like i said, this would definitely hit the spot for the cream cheese-o-phile.

tee hee. yes, it’s so weird. i was having this mind-body fight. “no it’s sunflower seeds, completely vegan!” “no! it’s dairy, i’m telling you i can TASTE it!” weird. =)

this sounds so much easier than trying to let the “cheese” ferment on the counter for days… thanks for posting – your a lucky one to have not liked Cream Cheese ;)

i used a mix of wakame and kombu. as long as they are the soaking kind (i.e. not dulse) it shouldn’t matter too much.
