Sweet Potato Angel Hair with Cilantro Ginger Pesto

Serves about 4 as a meal or 8 as a side, I'm guessing

Really nice dish I whipped up when I was desperate to use raw sweet potatoes for the first time. It turned out great!

Ingredients

  • 2 Sweet Potatoes, Peeled and Halved
  • ½ cup Olive Oil
  • ½ cup Water
  • 1 inch Piece of Ginger, Peeled
  • 3 Large Basil Leaves
  • 1 Handful of Cilantro
  • 1 Handful of Raw Walnuts
  • 1 teaspoon Dried Tarragon
  • 2 or 3 Cloves of Garlic
  • ½ Cucumber
  • Salt/Pepper to taste

Preparation

I used a sprializer to shave my sweet potatoes into angel hair strands, but you could also use a zester.

Throw everything else into a food processor or blender and blend until smooth. Pour over pasta and let sit for 15-20 minutes.

this sounds so good. i just started making “pasta” out of sweet potatoes, using my zester. And i have to say I LOVE IT!! :9 they’re so sweet and have a nice texture when cut into very thin pieces. can’t wait to try them with this sauce.

Sounds like such a great idea! :) Pesto recipes always seem to use walnuts, which I really don’t care for. Would some other nut work you think? Pecans maybe? Or brazil nuts?

Pine nuts are traditional for pesto, I just didn’t have any today. I think any nuts would be good though.
