Mushroom Tomato & Asparagus Curry
Serves 2 - 4 depending how much you eat
This is a spicy indian curry. I was craving tomatoes and spice and this was very satisfying.
Ingredients
- Sauce Ingredients
- 3 Tomatoes, chopped roughly
- 2 tablespoons Dried Tomatoes
- 1 stick of celery, chopped
- 1 carrot, peeled & chopped
- 1 tablespoon Tamari or Bragg's Amino Acids
- half medium sized onion , chopped
- 2 tablespoons olive oil
- 1 tablespoon garam masala less if you don't, want it fairly spicy
- 1 pinch red chili if want very spicy
- Chunky Filling Ingredients
- 1 carrot , sliced in small pieces
- 6 asparagus spears , cut in bite sized pieces
- 6 button mushrooms, sliced
- 2 ounces shredded spinach
- 4 ounces lentil sprouts (optional)
- 4 tablespoons cashews
Preparation
Put all of the sauce ingredients in a vita mix blender if you have one, a regular blender or food processor will make a chunkier sauce.
Shred, slice or chop the filling ingredients as stated and put into the sauce.
