Beetroot Dip
2 Cups
This is just a gorgeous recipe, one of my favourites!
Ingredients
- 2 Beetroots, Peeled
- Juice Of 1-2 Lemons
- 2 tablespoons Olive oil
- 1 clove Garlic
- 2 teaspoons Cumin
- 1½ teaspoons Sea salt
- ½ Red onion
- Handful of fresh parley or Oregano
- ½ teaspoon Pepper
Preparation
Chop the onion and beetroot, add to the other ingredients in the food processor and process until smooth. You can also add corn kernels to this.
