Mayonut
Makes 1 cup
It’s a very straight forward, neutral flavor similar to mayonaise. I just used it in my barbecue chick-un salad and it was so delicious. I need to post the picture later :)
Ingredients
- 1 Young Coconut (just the meat), Cut and drained
- Between 1/8 and 1/4 cup of water
- 2 teaspoons Vinegar, I used regular, not a fan of acv
- 2 teaspoons lemon or lime juice
- 1 teaspoon Sea Salt
- 1 teaspoon Agave (or sweetner of choice)
- 1 dash Tumeric (for color mostly)
- Olive oil, between 1/8 to 1/4 cup, drizzle in till desired consistency is reached
Preparation
Blend everything together adding water slowly until the consistency is very smooth. Taste it then adjust seasoning to suit your taste.

That looks amazing! I have a young coconut that Ive been putting off opening cos its so darn hard to do and I may just tackle it tomorrow to try this. [My bf has just peered over my shoulder and gone “Mayonut????”] they just dont understand!

harmonylia, This looks absolutely amazing. I’ve been thinking about mayo lately and how the mac nut mayo just doesn’t have the fattiness. This looks like the real deal. Can’t wait to try it.

Hey mandelicous, I haven’t tried it with the water, I was afraid it might give it a very coconut flavor, so I opted out. The sweetner is minimal, a teaspoon, and as a hypoglycemic myself, I avoid as much sweetner as possible. If you try it with the water, please let me know how it comes out!

Ok, so I made this once, and it was so creamy and smooth, then made it again, got it even better and took the picture, then made it the last time and it was runny, couldn’t figure out why, so took another picture, now, it dawned on me when I made it today, I forgot the oil last time, I’m a dork, all apologies!
