Butternut Squash Soup
Serves 1 as a meal or 2 as a side
Amazingly sweet and savoury, with just enough kick to leave you blowing your nose.
Ingredients
- 2 cups butternut squash, chopped
- 2 oranges, juiced
- ½ cup mango
- 1 teaspoon pumpkin pie spice
- ¼ teaspoon cayenne pepper
- 1 clove garlic
- salt & pepper to taste
Preparation
Add a little water to get things going, and mix away in your food processor! Top with sesame & hemp seeds, and thin slices of sweet potato. Can be served warm or cold.

Oh my god, that looks way better than the boring butternut squash soup I’m having. I’m gonna make this SOON. Wow. though I’ll leave out the garlic & add more cinnamon & nutmeg. (I’m a bit fiend-y for those spices)

With the garlic, it is a bit of an acquired taste. I put garlic in EVERYthing! Haha Maybe that’s why I have such a hard time finding a boyfriend… =P

I’ve seen a few squash soup recipes, but never with the addition of oranges & it sounds amazing! Definitely trying this soon. And I’m with you … I love garlic! Thanks for sharing. :)
