Cocoa LARABAR Cheater Spice Filled Cookie
This was so fantabulous I just had to share!!!! I had some chocolate LARABAR’s hanging around and thought I would put them to good use …. and WOW, I was blown away!!! You could use any chocolate cookie you have laying around. I think I will definitely be making my own chocolate cookies so I can make these all the time.
Ingredients
- Cocoa Coconut LARABAR, 1 bar will make 1 very large cookie
- Filling:
- 1 cup raw macadamia nuts
- 1 tablespoon mesquite powder, level
- approximately 5 large shakes of cinnamon, (probably equals 1.5 to 2 teaspoons) or to taste
- 3 or 4 tbls raw agave or to taste
- juice of 1 small key lime,, mine had the diameter of about 1 to 1¼ inch
- teensy weensy bit of water, just enough to get the nuts going in the blender
- couple shakes of pumpkin pie spice
Preparation
- For the cookie, take the LARABAR and using a rolling pin, roll it out into cookie thickness and cut in half.
- For the filling put all of the filling ingredients in a Vitamix and start on the lowest speed gradually working up to a speed that keeps the mixture whipping but not spurting up the container. This will make a smooth creamy thick spread.
- Spread some of the filling onto one of the cookie halfs and top with the other half & enjoy!!!!

Thanks 123 for the link. They sound good but I will be definitely be adding carob or raw cocoa to any of the bars for this recipe. I tried some of the filling with one of the cashew cookie LARABAR’s I had on hand (yes, I usually have a variety stock of them LOL) and it definitly tasted way better with the chocolate. The cashew cookie tasted too similar to the filling. :o)

I love Lara bars, but the cashew cookie bar is my least favorite. I like the cinnamon roll bar and the pecan pie and the lemon and the cherry and the apple pie and the… Your filling would be good in any of these!
