Vegetable Croquettes
Serves 4
Tasty vegetable croquettes for lunch or dinner. Nicely served with salad and mayonnaise. Yum!
Ingredients
- 1/2 onion
- 1 medium tomato
- 2 handfuls of lentil sprouts (opt)
- 1 zucchini
- 2 carrots
- 5 large broccoli florets
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp paprika
- 1/4 tsp sea salt
- 2 tablespoons olive oil
- 1 cup sunflower seeds, ground
Preparation
Put 3/4 of the ground seeds into the food processor, add all the other ingredients apart from the oil and process. Stop the processor and spoon down the veg from the sides, add the oil and process again for a few seconds.
Put the remaining ground seeds into a bowl and add a little ground or whole flax seed. Take spoonfuls of the mixture and shape into little long croquettes, coat in the seeds and place on a teflex sheet. Dry at 145 for one hour, then flip over and turn the dryer down to 115 for the remaining time. These can be eaten warmed up just for 10 minutes in the dryer or dried a little more for lunch the next day.

Sweetpea, what’s the approximate total dehydrating time? I’m not big on dehydrating entrees, only desserts. I might just remove the Teflex sheets halfway through to speed things up. BTW, looks yummy and substantial! :)

Thank you everyone for such lovely positive comments. After 6 years all raw in the UK, I’ve had to be innovative to stay raw by making alot of raw versions of my favourite ‘cooked’ versions.
Punky, to accompany the croquettes, I just massaged some kale with a pinch salt and oil and about a tablespoon of raw seed paste (in my book), any mayo or seed pate recipe will do. I then put a slice tomato on top and used this on my plate. A little more mayo or seed paste as a cream on the side. I have to say I really enjoyed eating this one!
Achin70, you don’t have to dry these but I like them warm and they form a slight crust making them more liked the ‘cooked’ version if you dry them out longer. I put them in at 145 for 1 hour to get started and then turned them down to 115 for about another hour. Now, I know there’s some controversy about dehydrating times but I go with the ‘tree of life’, Gabriel Cousens kitchen and their recommendations when using an excalibur.

I made these last night for the first time. The dough was really wet and it was hard to coat the logs with the seed paste, so I mostly just mushed the paste on the logs. They sure didn’t look nice going into the dehydrator, but I was hoping for the best! This was lunch and really enjoyed the flavors and the texture, but not big on visuals. I’ll be making your Cheesy Pie tonight – can’t wait! Thanks.
