Chocolate Tapioca Pudding
Makes 1 cup of pudding
A friend made this for me once, except she replaced the coconut with dates. DELICIOUS AND EASY TO MAKE!!!!! This is so filling, and chia seeds are a complete source of protein. It’s a perfect, delicious source of protein for kids, with 15 grams of protein per serving (go to oneluckyduck.com, select EAT, then ingredients, and Chia seeds. it lists the nutrition content)
Chia seeds are great for anyone with constipation, as they ease digestion. Good for diabetics as well.
You could also try a vanilla pudding, but the chocolate powder seems to be a major ingredient in this recipe. Oneluckyduck.com suggests mixing chia seeds with cashew butter, but why would you want to mix some exensive, high quality product as chia seeds with cashew butter? It’s gross to me. :/
Ingredients
- 1 cup thick Thai young coconut meat
- 1 cup chia seeds, soaked 4 hours
- 1 heaing tablespoon raw cocoa powder
- 4 tablespoons maple syrup or agave nectar
Preparation
Blend everything except the chia seeds in a vita-mix until creay and smooth. Then, spoon the soaked chia seeds in the chocolate pudding and stir until mixed. It will look like tapioca pearls!

This sounds goods. I am picking up some CHIA seeds tomorrow as this will be my first time buying and trying them. My daughter and I are very sensitive to slimy feeling food. Are chia seeds slimy once they are soaked, can’t help but to ask as when I look at them on the tapioca recipe on this site they look some what weird.

Yes, they are one of the most mucinelagenous (I’m sure that’s not spelled right) seeds. BUT, they are also the only seeds that are tolerable when soaked! They are great!!! Whenever they hit water, they produce a nice gel JUST like tapioca pearls!! Try it!

oh, this one sounds good too! Cherie, they are tasteless to me. All you really get is the mouth feel of the crunchy seeds popping in your mouth. I don’t find them slimy in the least, in fact I have been loving this new discovery!

yes cherie, they are completely flavorless, just have a nice tapioca pearl texture. Don’t grind them, if you do this you will end up with chia-coconut dough, instead of pudding. Just stir them in after they soak, and you’ll have great pudding! Your welcome :)

Ammanoel I get my CHIA SEEDS from the VITAMIN SHOPPE not sure if you have this store in your area but they also have a website where they can ship them to you. The product is GREENS CHIA SEEDS>
I just made this pudding this morning and loved it. I had to add 2 Tbs of Chocolate as I find 1 Tbs just doesn’t do it for me. I also added a little more agave since I added the extra chocolate.

anmaoel – chia seeds are expensive no matter where you buy them, but oneluckyduck.com sells them for about $13 for 10 oz. I buy them for 17.00 per pound at my local health food store, Roots Market. I am near two Vitamin Shopppes, but neither of them carry chia seeds, so it all depends on your area since ardesmond bought them there.
Ardesmond – maybe the next update for Gone Raw is to make a Gone raw restaurant chain store!

Sunfood.com: 10.95 for 1.50 pounds Naturalzing.com: 6.29 for 8 oz. Livingtreecommunity.com: 6.99 for 8 oz., 13.98 for 1 pound, 24.99 for 2 pounds
Sunfood.com has the best deal, but it’s a whole pound and a half. Have fun shopping!
