Dried Shredded Coconut

Makes 1-2 cups of dried shredded coconut

This is a little more work than buying the pasteurized kin that has chemicals in it, but it’s a great alternative!

Ingredients

  • 1 brown hairy coconut

Preparation

Cut the coconut meat into little pieces (not too small) and dehydrate it for 24 hours or more, to get it as dry as possible. Put it on “chop” in a food processor until the coconut turns into shredded coconut. Store in the freezer in an airtight container.

Veggie peeler. As simple as that. Unless you are referring to the shell. In that case I personally use a hammer :).

Wilderness Family Naturals sells raw, dried shredded coconut. But this is good to know if you don’t have access to the raw stuff.

that’s true angie. But I read online somewhere a long time ago that when the shredded coconut travels oversea it discolors due to exposure to the hot sun, as it travels through tropical areas usually. To prevent this, they add toxic chemicals that prevent the discoloring. That’s unfortunate, because this is alot of work. oh well, maybe there’s a company out there that doesn’t put chemicals in it. :)
