Indian karma
two dinner sized
I was craving indian but lacked the ingredients for Zoes wonderful cauliflour Karma so i created this and had it over cauliflour and pine nut “rice” with a sprinkling of peas and half a chopped fresh tomatoe (chop cauliflour and pine nuts in equal portions in mini processor with some salt and a touch of olive oil)
Ingredients
- 1 cup carrot, chopped
- 1 cup carrot, roughly chopped for blender
- ½ big tomato, roughly chopped
- ½ large tomato, roughly chopped for blender
- ½ large red or orange pepper, chopped
- ½ clove garlic
- ½ inch of fresh ginger
- ¼ cup fresh cilantro
- ¼ cup sundried tomatoes briefly soaked
- 1 handful raisins soaked with sundried tomatoes
- 1 teaspoon curry
- ¼ teaspoon garam masala
- ⅛ teaspoon cumin
- 2 tablespoons olive oil or less to your taste
- salt to your taste
Preparation
everything blended but the raisins and sundried tomatoes, then add these without the soak water and pulse blender until tomatoes are broken up into small pieces…it thickens nicely . i then warmed in the dehydrator for about 1/2 hour while prepareing hubbys food…he kept eyeballing mine over his pizza! teehee
