Banana Chocolate Mini-Cupcakes
Makes about 20 Miniture Cupcakes
What a delicious treat! And what a fun and festive delight to serve at parties, especially in place of cupcakes for kids!
Ingredients
- 2 Bananas (peeled & cut in 1 inch slices)
- 1 box Raspberries
- 1 cup Cacao Powder
- 3 tablespoons Agave Nectar
- ⅓ cup Coconut Butter
- 2 tablespoons Cacao Butter
Preparation
Cacao Frosting Directions: Warm the Coconut Oil/Butter and Cacao Butter in a glass container surrounded by hot water until it is liquid. Mix in Agave Nectar and Cacao Powder until creamy.
Cupcake Assembly: Put Chocolate frosting on cut bananas and place a raspberry on top. Put on a tray in the refrigerator and serve soon (before the bananas turn).

Thanks! They are, we’ve eaten half the tray already. (Well, not the try but the cupcakes!) Wish I would have figured this out before my daughter’s birthday 2 weeks ago!

There is always next year. You could make it bigger and make a torte :).

Spring form pan. Line the bottom with the nanner slices (maybe half thick for a doulbe layer) and then put a layer of the chocolaty love over it filling in the gaps maybe another layer of thin nanners with a final layer of chocolate chill remove outter ring and frost the outside :). Maybe I dunno. It could work. I’m just the helper bee in this little honeycomb.

These look so great! Just curious, what is cacao butter, and where can I get some? Thanks!

Could I omit the cacao butter? Or what is it and where can I (we) get it? Thanks!
