Parmesan Vinaigrette
Serves One or Two
This is my favorite RAW DRESSING ever!! Sweet and tangy and simple to make!
Ingredients
- ⅓ cup Raw Parmesan, grated
- 3 tablespoons Extra Virgin Olive Oil
- 2 tablespoons White Wine Vinegar *optional
- 1 teaspoon Garlic, finely chopped
- ½ teaspoon Raw Mustard
- Salt & Pepper
- 1 Lemon, cut in half
Preparation
In a bowl whisk together all ingredients except for the lemon, wait until your done whisking to squeeze the lemon juice in.

Do you think the recipe would be just as good if one used acv instead of white wine vinegar? I know it’s optional, but I’m sure it improves the flavor.

Well I bought my raw parmesan from a whole foods store so there really is no “recipe” that I used and unfortunately same thing with the mustard, although, someone did tell me once that all mustard is raw.. I don’t know how true that is though.

It’s a dairy product, like raw cheddar or raw jack. Definitely not raw vegan, but you can find recipes on this site for making your own raw vegan parmesan. Try the recipe for “Sprinkle” for example.
