spicy garion kale!
serves 1 (generously.. but the head of kale i got from the store was huge yesterday so half of it was a pretty good size!)
so this isn’t COMPLETELY raw… i’m really knew to eating a high-raw diet. i ussually have this later in the day and consume all raw fruits/veggies before this… SO.. if you know of ways to make this more/completely raw then go for it! and tell me too :)
Ingredients
- ½ purple onion, sliced into circles
- 4 cloves garlic, mashed
- olive oil
- 1 tablespoon crushed red pepper, use fresh if you've got em. i dont right now :(
- 1 teaspoon cumin
- ½ cup favorite veggie juice, (mine was carrot,kale,celery,ginger,and cucumber
- ½ head kale, bite size pieces
Preparation
sooo here is what i did
all ingredients except kale and salt into a pan over superlow heat… i let them simmer till i liked the texture and sweetness..
massage kale and salt together WITH HANDS till it’s softer. till it’s the texture you like
*after the onion mixture has cooled off significantly in the pan… i mixed it with the kale and …...yum :)
i’m thinking you could marinate the onions and garlic in the spices, juice and olive oil and then dehydrate them maybe?? so they have a bit of a cooked texture. and then mix the left over liquids with the kale and onion/garlic mixture at the very end??? who knows… i think i was just takin the easy way out cus i wanted it quik :)....... anyone with more patience/ experience… let me know of any suggestions please :)

Hey, very cool! You could just heat the ingredients to 115 degrees, or when the mixture feels just hot to the touch. If you’re anal retentive like me, you can use an instant read thermometer. Or you can dehydrate the whole dish at 145 degrees for an hour (supposedly, the temperature inside the dehydrater is 20 to 25 degrees lower than the setting, and the internal temperature of the food is even lower). Hi there!! This looks really really yummy. I havenīt been able to find kale yet here, but iīm wondering how it would work with another sort of sturdy leafy green like chard or something. I`d really like to massage some veggies :) BTW, I think this would work very well with just marinating the other ingredients for a while and then mixing in the massaged kale. All that the cooking would do is infuse the onions and garlic with the spices which would be achieved with patience as well.

Oh, I should add the dehydrating directions above apply to Excalibur Dehydraters. I’m not sure if the enzymes would be preserved if you turned the temp up to 145 degrees using another brand. :)
