Orange and Cucumber salad with sun dried tomato dressing

This is one of my favorite salads to date. I got this from epicurious.com. I think the flavors compliment each other well and the dressing is a surprising flavor. The original recipe calls for 1/8 tsp salt and pepper.
Ingredients
- 2 oranges, thinly sliced, crosswise
- 1 cucumber, thinly sliced, crosswise
- 1 cup olive oil
- 1 tablespoon apple cider vinager
- 1 tablespoon Honey or agave
- 1 tablespoon soaked sundried tomato
- ⅛ teaspoon cinnamon
- ⅛ teaspoon cummin
Preparation
Scatter orange slices and cucumbers on a platter.
Whisk together remaining ingredients in a bowl until combined, then pour over orange slices and cucumbers.

Hi, Is the dressing for more than one salad? I’m assuming it is, b/c that seems like a lot of olive oil for one serving. Thanks!

Yes, there is more dressing than the cucumber and orange salad would need. Haha you don’t want to engulf the cucumber and orange with the dressing, that would be gross. You could add more cucumber and orange, or use the dressing for another salad. Either way. :0)
