Amazing Fudge

This is a recipe I’ve made into my own from Jordin Rubin, author of Heal Thyself.

Ingredients

  • 1 cup coconut oil, melted
  • ¾ cup carob powder
  • ¼ cup almond butter
  • ¼ cup honey
  • 1 tablespoon vanilla

Preparation

Place coconut oil, honey & almond butter in bowl over simmering water and stir until all has melted and become one. Remove from heat and add carob & vanilla. Pour into square dish and refrigerate until solid. Cut and enjoy!

A few variations I’ve made recently have been truly yummy. Instead of almond butter, I used raw tahini. I also added some dried coconut, cacao bits, cacao powder (1/2 of carob amount), dried, soaked cherries cut into pieces, and coconut butter (sometimes the kind with goji berries), and maca/lucuma powder (about 1TB). I just kind of eyeball any of the dry goodies, maybe like a handful?
