Spicy Walnut Taco Meat

This is a hearty meat-like recipe that only takes a few minutes to grind and mix. I often take this taco “meat” with me when the family is having a taco night. Pictured here with lettuce leaf, Pico de Gallo, Groovy Guacamole and Macadamia Sour Creme. If I’m planning ahead, I also like to make raw tortillas.

Based on a recipe by Matt Amsden. I’ve cut down on the Nama Shoyu, as this taste was a bit overwhelming for me, and added some cayenne for an extra spicy kick. This recipe is best with soaked walnuts!

Ingredients

  • 1½ cups raw walnuts, ground in food processor
  • 1½ teaspoons ground cumin
  • ¾ teaspoon ground coriander
  • 2 teaspoons Nama Shoyu or Braggs
  • pinch cayenne

Preparation

Mix and serve.

I have to thank you for this recipe- I crave it often, and it saves me in those times when my mind starts wandering towards cooked. Today I put the mixture in a nori sheet, added sliced avocado’s, some sprouts and marinated mushrooms and it was so good I had to have 2! Absolutely delish!

The recipe works either way, but it is ideal to soak the walnuts for an hour or two first. If I forget to soak ahead of time, I’ll toss the walnuts in water while I am chopping and preparing any of the other ingredients and then make the taco meat last.

Okay this was so good I kicked it up a notch. Try topping RAW corn chips (RAW FOOD REAL WORLD) with the, some mac cheese. I put it in the dehyrator and BAM… Ranachos:-) Then I topped it off with guacamole (RAW FOOD…), a few cherry Tomatoes and enjoyed every bite. It was soooo much fun.

My family LOVED this. Its like a combo of beans and meat. Even my picky non-raw 13 year old said she loved it and would eat it voluntarily as a snack or a meal! I used Chipotle instead of Cayenne and South River Dark Barley Miso instead of Nama Shoyu or Braggs.

I LOVE this! Sometimes I put in a clove of garlic and 6 sun-dried tomatoes. Either way, it’s super delicious. I make a layered dip with mashed avocado on the bottom, taco meat in the middle, and fresh salsa on top. I spread the dip on barbecue chips, a recipe I got from Absolutely Abeba’s Krazy Krackers (available from rawfamily.com. Delicious!!!

Wonderfully simple, yummy & nutritious! Texture reminded me of TVP from my old veggie days, but the taste is so much better. My non-raw friend loved it – I made a burrito with Fajitas (see recipe) in an Ezekiel tortilla.

I just made this with fresh cilantro instead of coriander seed. I also added a little red onion. It was fabulous! Instead of rolling it in romaine leaves, I just made a taco salad topped with avocado and organic tomatoes (grown by my neighbor). I will probably make some version of this regularly.A+

I made this today for lunch, it was great. Except, I did not have any raw tortillas. So, I made a salad with kale. I made guacamole and used the guacamole as a sauce. Added some raw corn, then the taco meat. It was delicious!

Yum! I’m not 100% raw yet, but I’m getting there and I’m trying to find more recipes so being raw will be fun. And this is defintiely a keeper! I put just a bit of olive oil and water because I didn’t have any nama shoyu. And I the only nuts I have right now is walnuts and I don’t even like them, but with all the spices (cumin, coriander, chili powder, garlic powder, salt..) it was really good on romaine lettuce with tomatoes. Oh, and if you put a tad of agave it’s reminiscent of salsa on it. And I told my non-raw mom to try some and she said it was delicious! I’m slowly but surely changing the ways of my family. bwahahaa!! ;D

This stuff is heaven!!! It smells sicy and tastes so thick and meaty, but is a million times better. I didn’t have any Nama Shoyu or Braggs on hand, so I made it without, and it still worked beautifully. I put this spicy walnut taco meat along with sunflower seed/almond cheese, shredded carrots, tomatoes, and spinach all together on a large collard green leaf and wrapped it up into a large burrito and cut it in half. It was soooo fresh and delicious!!! I’m saving the other half for mom to try. :)

Thank you Kandace!!!! I made this for my defiantly SAD husband tonight (my first time to convince him to try a raw entree), and he LOVED it! He doesn’t get super excited about food (prob’ly because he’s so SAD), but his exact words after his first bite were “Wow! This is GOOD!” Never thought I’d be moved to tears by taco meat, but life is full of surprises :)
