Beet Salad
One of my all time favorites in the summer and fall, cold and refreshing. Beets are nice and earthy, spicy or sweet carrots, spicy garlic…mmmm Also, beautiful color! I use Balsamic vinegar and olive oil, but whatever works for you is what’s best :D
Ingredients
- Beets, grated
- carrots, grated
- Garlic, Minced or diced
- Oil and Vinegar, to taste
Preparation
I like 2x as many beets as carrots and a ton of garlic, but play around with it as you wish. I generally use 4-5 red beets, 4 spicy carrots, and 5 cloves garlic (my partner complains that it’s too much) Maybe a tbsp each oil and vinegar. Food processor helps.
Also, blended this makes a lovely dressing :D

I used to love the canned beets, so this recipe is making my mouth water!
I’m guessing I need to peel the beets? Or can I just throw ‘em in the processer as is?

Oh, yeah, I like to peel them, but no harm in leaving the skins on…scrubbed well.

This looks delicious! I’m so excited I found this because when I was at the grocery store I saw these lovely beets and I have been trying to figure out what to do with them. But now I know! Can’t wait to try it!

I made this last night and put it over the greens from the beets. The flavors of the veg were so vibrant that I didn’t add oil or vinegar. Delicious.
