Minty-lemon Melon Smoothie

Serves 1

This is soooo cooling and refreshing – I just had one and needed to share!! The slight creaminess from the brazil nuts and sunflower seeds, mixes perfectly with the mint-melon-lemon tang. The use of a small amount honey or agave brings out the flavour of the melon – be sure not to use too much! Enjoy:)

Ingredients

  • 1 Small-medium Bannana
  • Honey dew melon
  • 1 cup Fresh mint (the more the merrier)
  • 2 inch piece of fresh ginger root
  • 3 Brazil nuts
  • 1 sprinkle Sunflower seeds
  • 1 Lemon (use half if you prefer less tang)
  • 1 tablespoon Honey or agave syrup (optional)

Preparation

Put bannana, half a honeydew melon, a bunch or large handful of mint, ginger root, brazil nuts, seeds and half a lemon (flesh as well) into blender and blend for awhile until a smooth creamy magic consistency appears. Taste the smoothie to see in you want more lemon… add the other half if so. THEN! add a lil bit of honey or agave to taste. Blend again.. Pour into a large jar or other smoothie vessel and allow this yummy dring to soothe you. Xx
