Makes 3 "candy" bars

These are one of my all-time favorite candy bars. When I saw the beautiful pulp from making coconut milk I just had to make these! I would like your suggestions on making them even more sticky and gooey like the “real thing”. Although I enjoyed these very much and they have that freshness that a candy bar could never have. They really hit the spot.

Ingredients

  • Filling
  • 1 cup Coconut pulp from young coconuts
  • ½ cup shredded coconut
  • ½ teaspoon Honey
  • 2 tablespoons Agave
  • 1 dash Sea Salt
  • Chocolate yumminess!
  • 2 tablespoons Raw Cacao Powder
  • 2 teaspoons Organic chocolate extract
  • 3 tablespoons Agave
  • Last but not least!
  • Raw almonds, soaked or unsoaked

Preparation

I have to admit my measurements may be a bit off. I just whipped these up to taste based on the amount of pulp I had. Please add these ingredients slowly and to your taste.

Make your chocolate sauce first and set aside so that it can thicken up. If you like it dark, make it the way I have suggested. If you like milk- chocolate, take out the extract, less cacao, and add nut milk slowly until desired consistency.

Mix the filling ingredients in a bowl and then form into candy shapes on a plate or on wax paper.

Place Almonds on top of the candy bars and press them in gently.

Cover with desired amount of chocolate sauce.

Set in fridge or eat immediately before anyone see’s what you have made!

PS: If you have made to much chocolate sauce, No worries it goes great on strawberries for the next few days!

OMG, I love almond joys….(or at least I did) I will definitely be making this…and there’s no problem about the left over chocolate…I keep loads of strawberries around!

I couldn’t get the consistency right on this one, so I just put the coconut filling in a mini-cupcake pan, and poured the chocolate on top! It’s in the freezer right now, but it looks delicious! :)

Simplylife: the pulp from a young coconut (do you know what a young coconut is?? It’s white and odd shaped, look it up on Yahoo or somewhere like that to get a visual)... well, after you open the coconut, you have the water and the pulp. The pulp is simply the white “flesh” that you scrape out with a spoon (or whatever you have that might work). I think i’m going to try this with just shredded coconut, no “pulp”... If it doesn’t come out good, then i’ll try with the pulp. Plus, i use Carob instead of Cacao, but same principal :) This just looks so amazing!!!!

Okay, i made these and they are amazing! Seriously, take my word for it and atleast double your recipe! 1/2 of mine never even make it to the chocolate stage :) I just made my 2nd batch and they are so good! I thought the gooeyness was just fine! I’m not sure if you added the water when you blended the flesh. I did not. I just scraped the flesh, put in blender with vanilla and agave. Then, in a bowl i mixed with some dried coconut and i thought the consistency was soooooo close to a real almond joy. I did soak my almonds for a few hours and I liked them better this way – and some i didn’t even put almonds on top. I did bite size bars – i rolled into a ball and then flattened onto a plate. They held up very well! Then, i just drizzled some chocolate sauce on and used my finger to spread it around. These are soooooooooooooooooooooooooooooooooooooooooo delicious!!!! Thanks!
