Creamy Cashew Icing
Makes 2 cups.
A yummy “cream cheese” icing, from Chad Sarno.
Goes well with the Carrot Cake recipe I have posted here.
Ingredients
- 2 cups raw cashews, soaked
- 2 tablespoons lemon juice
- 2 tablespoons dates, soaked
- 1 tablespoon coconut butter
- 1 teaspoon vanilla extract (or half a vanilla bean)
- ¼ teaspoon salt
Preparation
Place all ingredients in a high-powered blender and process until creamy.

I just tried a carrot cake recipe on here and loved the cake but not the icing. I think I will try this next time!

Hi there.
By “coconut butter”, do you mean coconut oil? Or a product made of ground coconut meat – with or without some proportion of coconut oil? I’ve seen this term used both ways, and I find it very confusing.
