Raweo Cookies with Nut Milk

Yes, really!

So, here’s the story: For the past few days my roommate has been walking around munching on a bag of Newman’s Own Hint’O Mint sandwich cookies. I’ll admit it, at first I was jealous. But then, I got inspired! The result turned out fabulous. The filling tastes exactly like the center of a York Peppermint patty.

Ingredients

  • ¾ cup raw almonds, soaked
  • ¾ cup raw brazil nuts, soaked
  • ¾ cup young coconut meat, chopped
  • 1 tablespoon coconut butter (not oil)
  • 2 tablespoons raw honey
  • 1 stevia packet
  • ½ teaspoon alcohol-free peppermint extract
  • ½ cup cacao nibs, finely ground in a coffee mill
  • ½ cup shredded coconut, finely ground in a coffee mill
  • 2 stevia packets
  • 1 teaspoon vanilla extract
  • ½ cup very soft pitted dates

Preparation

First, blend the soaked almonds and brazil nuts with about 4 cups of water to make nut milk. Strain the nut pulp and spread it on a Teflex or parchment paper-lined dehydrator sheet. Set the dehydrator at 105 and allow the nut pulp to dry. Season the nut milk however you like (sea salt, sweetner of choice, vanilla, etc.) and put it in the refrigerator to chill.

Next, blend together the coconut meat, coconut butter, honey, stevia, and peppermint extract until smooth. (If you don’t have any coconut butter, you can grind some shredded coconut in a coffee grinder or food processor and mix it with and equal amount of coconut oil -instant coconut butter!) Scoop the mint cookie filling into a small bowl and put it in the refrigerator to chill. (If you happen to “accidentally” eat all the cookie filling, grab another coconut and try again!)

In a large mixing bowl, combine the ground cacao nibs and the ground shredded coconut (if using pre-ground cacao, use slightly more than half a cup). Take the nut pulp out of the dehydrator, you should have about 2 cups and it should be nearly dry by now. In a coffee mill (or food processor) grind the nut pulp until fine. It will start to look like nut butter. Add the nut pulp to the mixing bowl. Add the stevia packets and the vanilla extract. Mix thoroughly using your hands. Chop the soft dates (soak them a little if your dates are not soft) and mix them thoroughly using your hands to form cookie dough. Shape the cookie dough into small balls and flatten to make cookies.

Place the cookies on a Teflex or parchment paper-lined dehydrator sheet. Top half the cookies with the mint cookie filling. Dehydrate at 105 for about an hour until the filling has firmed up a little. Assemble your cookies and dehydrate for about two hours longer, flipping your cookies halfway through drying.

Serve Raweo cookies with nut milk. Store Raweo cookies in the refrigerator, or in the freezer like mini ice-cream sandwiches.

Please remember that all recipes are just suggestions. I posted this recipe as I made it, and it worked well for me. However, if a particular ingredient is not a part of your diet, feel free to substitute something similar that you find acceptable, (ie. carob for cacao, dates/agave/more stevia for honey) and it should work just fine.

Looks yummy..I bought some pre-made “Raweos” from a raw food website and they were disgusting..they tasted like ivory soap. These look far better, and like you said, you can make em the way you want. I wonder if you can substitute anything for the coconut..it does not agree with me.

Forrestlyone, Ivory soap? Yuck! That sounds terrible! :P I might suggest substituting soaked cashews for the coconut meat/coconut butter in the filling. That should give you a creamy white filling. Then leave out the shredded coconut in the cookie, and maybe add some ground cashews. (If cashews don’t agree with you… I’ve got no idea.)

Zoe, I’m glad you know what I mean, haha! Delicious accidents are the best kind!

Also, if anyone is not a fan of peppermint, you could use vanilla extract in the filling, for a more traditional-tasting sandwich cookie. I’m also imagining a spicy “Chai” variation of this recipe. I’ll let you know what I come up with.

It was not without its challenges…as anyone who works with coconut and dehydration has surely experienced. We quickly learned that certain ingredients when combined with coconut and exposed to low heat began a saponifying process. That’s the chemical reaction at play when a fat or oil meets up with a strong alkaline ingredient to create soap. And a saopy taste we created!! Unfortunately some of those cookies made their way into stores and into cusotmers canvas bags before we realized. We are grateful for those unfortunate few who bit into these early batches and immediately called us to let us know something was up. We spent the next month eliminating ingredients one by one until we found the culprit and arrived at a consistently wonderful tasting cookie.

Another way this taste can arise is when the cookies get really old. Although our cookies have a a remarkably long shelf life for a “raw” product (at least 3 months, up to a year if frozen) eventually the do breakdown. Websites that sell our line sometimes run into this challenge as their turn over can be significantly slower than a physical store plus they are dealing with multiple shipping and handling which exposes the products to varying temperatures (sometimes sitting in a UPS warehouse over a holiday…). By the time the treat reaches your hands it’s been around the block a few times. It’s always wise to check when a website received their shipment before buying food online. All of our cookies ship out within a week of being made so they are ultra fresh when the store/site recieves them.

We have had Raweos from Radiant Foods. They were good and did not taste soapy. The texture is soft. If you bite into it expecting an Oreo, then you will be dissapointed. If you eat it thinking of a raw cookie, it is great!!!

this might sound like a stupid question, but where do you get young coconut meat? is it from a coconut you buy at the store (brown with hair on it)? just wondering if there was another source people use… or if thats it. thanks! :)

anmanoel-young coconuts are not regular coconuts with brown hair. They are pointy coocnuts with a white husk and have soft meat. They are purchasable online, or at most grocery stores, like Whole Foods.

You can get young coconuts at the 99 Ranch Market for only .49 cents each. I buy them every week and they vary from $4.99 a case of 9 or $5.99 for a case of 9. I have been buying from them for months. They also carry durian. I just bought my first one today. They were half off! Wish me luck. I will be making these raweo cookies tomorrow!!!! Thanks for the “chai” inspiration!
