Cheese with Spring Onions
updated again! The easiest, creamiest and tastiest cheese ever! Just takes a few minutes to make. I took the water out of the recipe because I never actually put water in and looking at photos of people’s creations which use this cheese the cheese looked a lot more liquidy than ours is. It really doesn’t need any water, trust me!!
Ingredients
- 2 cups sunflower seeds, soaked for 2-4 hours, sprouted of you like, either is fine.
- 1 cup pine nuts
- 2 lemons, juiced, all lemons are different alter to your own taste
- ⅓ cup raw olive oil
- 1 bunch of spring onions (aka green onions)
- ½ tablespoon raw salt
Preparation
In your food processor process the dry ingredients (sunflower seeds, salt and pine nuts) until a fine meal. Then add lemonjuice and olive oil. Process again until smooth, Scrape off sides as needed. Get it so it is rolling as it moves around your processor. Process until smooth yet very thick. Dont be scared to let it go for ages, the longer it goes the creamier it is. Then at the end add the spring onions, everything except the roots, process slightly to break down spring onions. Allow to stand for 30 mintues. If you taste it while it is being made or roght after, expect the lemon to stand out. It dies down after it has sat for a while.
You can shape into cubes or balls and dehydrate for a while to get a firmer cheese for cheese salad, feta etc.

Hi elizabeth, it keeps really well because of the salt and the oil in it. If you keep it in the fridge it’s ok for up to 3 weeks (!!) We leave it out on the counter top and it is fine for a week.

Zoe – I’ve actually done a lot of recipes meant for food processors in the blender…I guess it’s pretty tough cause it hasn’t broken yet, lol. It has this button where you can pulse it instead of letting go for a really long time, and I move the stuff around with a spoon a lot.

Guess what! I just made some of this and spread it on some sheets of nori, then rolled it up with some butternut squash, red bell peppers, and baby romaine lettuce leaves. No lol that’s not true. Goo to wikipedia and it says under the avatar: the last airbender search that there will be a 2 hour movie at the end of the season fire. The season will be released in early May, so they have to finish the season before then. Episodes 18-21 will be packaged into a 2-hour movie. In one hour (7 pm) it will air. Yes I neutered him. Yes I know it isn’t right but neither is keeping an animal as a domestic pet, really…but there it is, I had to have him and so he is a pet… I have a friend who breeds Siamese and he has unneutered males, he says that all they are interested in is food and sex, they really aren’t pets if they keep their bits at all. His uneutered males live in pens outside. I decided that as he was a domestic pet that it would make it easier on him to be neutered, so he wasn’t always yearning after sex etc, and also to prevent him spraying. He is extremely fit and healthy with a huge personality. And he is a very devoted companion, we really are joined at the hip! He follows me around everywhere and normally is attatched to either my lap, my ankle or hanging over my arm. He is very talkative, he makes words like noises as well as more normal miows (or “me now” as I hear it!) he plays jokes and tricks on me all the time, he is a bizarre character, unlike any animal I have ever known. I gave him Tons of Reiki healing after he was neutered, and being raw helps, I am sure…

Really! That’s a relief, I thought that if I spayed Blueberry that she would lose her “funny ways”. She acts like a tiger, puts her back up high and twists it at the same time like she is going to kill me. haha Not to mention running around the house all the time and hiding under the couch while I’m sitting on it to attack my feet. When we first got her, we fed her canned food for like a day or two because we were looking for the right vitamin supplements and raw food. Then, we transitioned her to raw, and wow the changes were immediate and amazing. She just turned into an energetic tiger. She plays “finger fights” with me. It’s not really violent, just really hilarious. That all makes sense about wanting to keep him as a pet, I wouldn’t want my cat to be uninterested in me and just sex. Yes, Siamese are VERY talkative and this cat is certainly no exception. We are going to get another one in the fall as a playmate for her, it is going to be a Balinese, or Siamese with a long fur. I wonder if this one will be a tiger too…....

oooops! I can’t believe Zoe or I have never noticed this… Sorry. The SALT is wrong. It should be 1/2 tablespoon not a whole tablespoon. You can also try it without the Olive Oil, as I often make it without oil and never notice. Just remember to run in long enough before adding the lemon juice and again run it for a good bit afterwards as well. Even if you run in at a lower speed, it’s OK. The longer you process it the smoother and creamier it will be.

You have to get raw pet food at like a holistic or natural pet stores. Like I get my raw rabbit burgers, which is rabbit meat and bones ground up ad frozen. I also get raw ostrich meat, which is ground up ostrich necks, meat, and livers. You could also order it online, I’m sure. And also you should supplement with a little cod liver oil if you don’t have the liver in the food, and salmon oil if you do have the liver. Also I add some multivitamin supplement for dogs and cats. You can also get a complete formula, which has many different organs of the animal as well as certain plants like fruit and vegetables, but I don’t get that since my cat avoids the vegetarian one like the plague. And also because cats are carnivores not vegetarians.

rachel akiko – tonka eats the raw dog food. He loves it. I know other raw cats who eat it too. It is the only way I have managed to get him to eat vegetables – they put raw veggies in the raw dog food. I have read they’re meant ot have a little vegetables coz their prey would have stomachs full of veggies when they eat them. He has some alongside his chicken meat, bones and liver.

I made another batch the other day with 1/2 tablespoon of salt, & I put 1 Tablespoon of dried dill weed instead of te green onions. Different, but still alright – I rolled the dill one up in purple cabbage leaves – yummy. Both times I ate a bunch of it with a fork right out of the processor before putting it away & deciding what else to do with it :)

I tried this new version today, and it’s really good, but I did have to add a little water to get the mixture to turn. I tasted it first without the spring onions and I was a little discouraged about the taste. After I added the onions, the flavor really came alive. Amazing! They make all the difference in the world. Apparently I do need to grind the seeds first. I thought I’d try to power through throwing all the ingredients together and put my new vitamix to the test. It failed! But I did manage to make it eventually. Pretty good, kinda bland IMO, but a few herbs should spice that up enough for me. (My standard taste disclaimer is that I’ve only been at this for about 3 weeks now.)

My first attempt at cheese was a version of this today….Boy oh boy..I’m in for trouble.. It was sooo good and being a former cheese-aholic, this is a dangerous find. I used pine/sunflower one to one, omitted the oil to save a few calories, and added just a dash of shoyu(I know-not raw, but just a dash!) I also added a bit of lemon rind as well as the juice, and I added a bit of fresh dill. This didn’t stand a chance!!. 12-13 romaine leaves later, it was bye-bye baby! One of the more satisfying lunches i have had in a while. I also threw sliced radishes in my wraps, and in three of them i was lucky enough to add my first picked figs of the year-they were gorgeous and so sweet. The fresh, salty, sweet, crunchy, chewy textures and tastes were heaven! Unfortunately I tallied the calories of my little lunch on myfooddiary(great website if you are losing weight like I am-it lets you create dishes and total the calories)and this little rawstronomic feast came in at almost 1800 calories. Of course, I ate the entire batch of cheese!! No guilt, it was 99% raw, delicious and satisfying for the body and my soul(which needed it after working 29 hours the last two days) Thanks Chris and Zoe, as always for such a great, simple recipe.

Awesome recipe Zoe, it was one of my first raw recipes and it turned out great. I was wondering what the approximate refrigerated life of this recipe is?
P.S. to all readers: I cut the recipe in half and used 33% less olive oil and let the recipe stand for 30 minutes, and I couldn’t imagine it being any better! Its gonna be my new raw hummus…

Chris, I figured if the vitamix could make peanut butter, it could certainly make cheese. And it did eventually after the motor cooled down ;) But I’ll try the cuisinart next time. Thanks!

3 weeks in the fridge will be fine for sure. I doubt it will last that long unless you hide it behind something that you don’t ever move.
Hey f1shcakes, If bland, up the lemon juice. It should have quite a bite when you get the portions right. Normally it’s about 4 Tablespoons from 2 lemons over here. I’ve never made a batch that IMO had too much Lemon. The Lemon/Salt combination is what gives it the cheese flavor.

lisanewf – oh yes it goes amazing with onion bread. If you totally want to go to heaven then try Chriscarlton’s grilled steak recipe (the one where you dehydrate then marinade the mushrooms) on top of cheese and bread it is amazing!

Hey Zoe.. thanks so much, i luv this, yummm… my (SAD) husband, and my transitioning Daughter luv this… other SAD eaters also luved this, i will definately b making it again although it does make A LOT… i am dehydrating some now to see how that goes too.. I Luv your website too.. I feel very inspired and encouraged by both yours and Chris’s Journey’s.. I’m not 100%... and am desperately trying to find what is right for me with where i am at right now…
