zucchini-tomato primavera

Makes two servings

I bought my first dehydrater today and I am so excited about how yummy this dish came out. I just created it myself.. I wanted something that looked like pasta, but I don’t really know what it came out to be, except delicious!! I wish I had a photo to share, but my cell phone camera isn’t working. If someone makes it, can you please send a photo that way I can add it? Thanks!

Ingredients

  • 2 Zuccinni, Cut skin off and slice in half
  • 2 Tomatos, Slices
  • 1 Corn on the cob raw, Cut the corn off the cob
  • 1 tablespoon Soaked wild rice
  • 2 Rosemary stems
  • 1 tablespoon Italian seasoning

Preparation

Slice the tomatos, peel the zucchini and cut in half, then sprinkle them with italian seasoning. Place the tomatos, zucchini, and rosemary stems on the dehydrator. Dehydrate for about four hours.

Also soak a bowl of wild rice (use leftovers for later).

To serve, lay out the tomatos in a pile on a plate, then lay the zucchini’s on top of them, stick the rosemary stems inside of the pile, then cut fresh corn off the cob and place it around the dish. Take a tablespoon of soaked wild rice and pour it in the middle of the dish and voila, you have a winner!!
