Corn chips
Makes a bunch
My husband was craving chips and salsa like there’s no tomorrow, and I really felt guilty giving him dirty looks… So I finally made him some that were good enough to substitute!
Ingredients
- 4 ears of corn, shaved
- 1 cup flax meal
- 1 small onion, coarsely chopped
- dash cayenne, to taste
- 1 teaspoon sea salt
Preparation
Pretty simple… 1.Put all ingredients in food processor and process until pretty well mixed, no chunks. 2.Spread on dehydrator sheets. I usually make small-ish circles, but if I’m lazy I’ll just spread it all over. 3. Dehydrate for about 8-12 hours or until fully dry. No real need to flip them, but it can’t hurt if you’re impatient. 4. Break into pieces. If they’re in circles, you can break them into quarters and get lovely nacho-like triangles. If you were lazy, just break into anything small enough to fit in your mouth or salsa bowl.
That’s it! You can season it to your liking of course, I tried adding a lot of dill and some lemon juice and got a pretty convincing dill-pickle. I’m sure anything works though.

Do they turn out crispy like real corn chips? I tried a potato chip recipe and they didnt turn our crispy enough for me :/

These are very crunchy. If you spread them a little thicker, even more. That picture is of them being done the lazy way… I should make them again more patiently and they’ll look nicer.

Nope, didn’t use any water. The corn is moist enough to blend into a batter.

I have some in my dehydrator now. I didnt have any onions so I dont know if that affects the recipe or not. But they taste amazing! They have a very strong corn taste, maybe I need the onion to calm that down a little. :)

Hi MT! I made these in circles but they weren’t as good as yours look. I added a tbs of jalepeno. How did you get yours so thin?

Did you blend out all the chunks? I just spread them on parchment paper with a spoon and dehydrated until they were crunchy. Even when they were a little thick, they still had a great texture. Oh, and the first batch I made, I put a jalapeno in it :c)

These tasted bitter when I made them, I took the corn right off the cob, is it better to use frozen? I’ve found anytime I take corn straight off the cob it’s bitter

I wouldn’t use frozen, since it’s blanched. I don’t know, it never tastes bitter to me off the cob. Could it be under-ripe?

I got my Excalibur today and these chips are the first thing I made. They smell amazing and from the little bits off the side that I sneaked in my mouth it taste amazing too! Only a couple more hours before they’re done. My mom tested them too and she loved them!

I did use frozen ( dead, i know)
-lazy and it’s January-so the dough was too thick. I did add water so that good flax seed could gel and so I wouldn’t spend my life trying to spread these. It’s a little newbie trick I’ve figured out. Add more water for a thin cracker/chip, thicker dough for bread and add a few veggies pulverized and you’ve got a nice burger (thick). Just made these. Very nice! I did add a little lime to them and next time, I think I’ll cut out the cayenne so my kid can eat them and sprinkle some salt on half way through drying. I love being able to still smell the fresh corn from chips instead of that oilyness of cooked chips.
