Cucumber Hummus
Great way to get rid of those summer cucumbers and a twist on the traditional recipe.
Ingredients
- 2 lg Cucumbers, chopped
- ½ cup Tahini
- ¼ cup Lemon juice
- ¼ cup Olive oil
- 4 Garlic, chopped
- Salt, too taste
- Cumin, too taste
- Pepper, too taste
Preparation
Mix all together in food processor until smooth. Serve on crackers, sandwiches, salads or whatever.
Scoop seeds out of cucs first for a better texture!

What kind of texture did you get for the hummus? Since cucumbers have such a high water content, it seems that it would be very runny. Is that the case? I wonder if you cut the seeds out if you would cut down on the water.
