peanut butter crunch cookies

a bakers dozen...not counting the ones i ate as i "checked" then in the dehydrator!

so i saw the recipe for sweetpeas crunch cookies here on the site and got my heirloom peanuts the other day and wanted to practice with making my own nut butters….guess what happened? PEANUT BUTTER CRUNCH COOKIES!

Ingredients

  • 1 cup home made "jungle" peanut butter
  • 1 cup soaked and deydrated buckwheat
  • 1 cup raw oats , ground
  • ½ cup maple syrup or enough to get it all mixed together

Preparation

i ground the buckwheat and oats lightly in food processor then mixed it all up by hand and made balls that i flattened into cookies, i dehydrated them about 4 hours (I left one in for the day, it was crumbly when i bit into it but real peanutty! yum…)

She means the Wild Jungle Peanuts that you can buy from David Wolfes site. You also can buy Jungle Peanuts in Butter now. David Wolfe just started offering it on his site if you don’t want to make it your self. www.sunfood.com. I wish I had the raw oats than I could make these.

Sounds yummy but I can’t eat peanuts. These would also be great to try using hemp seeds as they are really crunchy.

(big grin)....queenfluff, alissa cohen is having a bulk sale, thats where i got my oats and coco now is the time to buy! sweet pea, what about fenugeek? its nice and maple-y hmmm wonder if its crunchy after a little dehydrating….or sesame seeds

Sure omshanti, add anything you think might work, I feel fennugreek might be too pungent, I think you mean fennel seeds?
