Zucaroni and Cheeze

Zucaroni and Cheeze

Satisfies a craving for macaroni and cheese. The base is like a lot of recipes on this site but I hadn’t tried this yet. I hope it inspires you too!

Ingredients: 

3 zucchini, peeled, cut in half the long way and sliced
1 red, orange or yellow pepper, deseeded
1 cup raw cashews (soaked for 2 hours if possible- or over night)
sprinkle sea salt
sprinkle cayenne
sprinkle pepper
1 tablespoon flax meal (optional)
sprinkle onion and garlic powder or hing
1 lemon juiced
½ onion
1 tablespoon sesame seeds
sprinkle paprica
sprinkle tumeric

Preparation: 

For this you can either dehydrate the zuchini beforehand or eat fresh. Cut the zuchini rounds in thirds. If dehydrating, coat with a little olive oil and salt and dehydrate for appx 6 hours. If fresh cut the thirds in half and salt and set aside.

Add everything together and blend. I blended the cashews and lemon first and then added half a yellow pepper and 1\3 red pepper. I didn’t have to add water but you may want to to make it thinner. I added a little pepper flavored olive oil- but this is optional.

Mix the cheese when it’s done with the zuchini. Enjoy!

i just made this with 1/2 cup cashews, added an avocado, and didn't have a yellow pepper. i'm in heaven!! can i write about this recipe on my blog? http://heartshapedsky.vox.com/

Hi Trinity! Actually it's hard to say but the cashews with the lemon and peppers are the primary flavors. I really like the cayenne, tumeric, and garlic flavors as well. A little celery seed is good too. A little sundried tomato could be added but I was nervous that it wouldn't get as smooth as the ingredients I had going already. The pic is with a whole zuchini in that scoop. The pieces were dehydrated about 6 hours on 120.I also blended in a vidalia onion which makes it a little sweet.

I just finished making this - was running low on cashews, so I tossed in some pistachios to supplement. So very tasty! I'd make this for the die-hard mac & cheese addicts at work.
