Zesty-Lime Corn Chips

Servings:
Makes 1 tray of chipsA corn chip flavored with a hint of lime. PERFECT for salsa!
Ingredients:
3 cup frozen corn
½ sweet onion
2 limes, juice
1 lime,
zest
¾ cup water, or as needed
1 teaspoon salt, or to taste
Preparation:
In a food processor, blend all ingredients. Corn mixture should be well blended but not runny. If too thick, add a little more water. Spread evenly onto Teflex sheet and allow to dehydrate until crispy.

I made these with fresh corn. I wonder if the frozen would make it less sweet? I actually couldn't eat them because of the overpowering sweetness. I was shocked since "old" corn chips aren't sweet at all. These would be great with a Mango Salsa.

That is the easy way...or you can make little circle chips right from the batter. If you want ot take it a step further you can fold them over halfway through dehydrating time and make them "bendy" for scooping

so do you just make one big square and break it after it's dehydrated? (I just got a dehydrator, sorry for the newbie question!)

Mine were quite sweet, as well, but I also was a little too heavy-handed w/ the lime juice so they were pretty tart, too. However, I broke them up into chips and they are really pretty great w/ salsa. Thank for this recipe, Aziah. I'll be making it again.

Did you use frozen corn or fresh? Maybe that is the difference? If you added water, try using just lime juice. Also try a bit more salt (but be careful as the dehydrator will make it taste saltier).
But FYI - mine did have a tangy-sweet taste to it...they didn't have the overpowering lime-flavored taste like tortilla chips in the store.

I tried making this and it was really sweet - not like the corn chips i used to have in the store - salty. Am i doing something wrong? I know corn is sweet, but i just didn't think the chips would come out this sweet. any suggestions?

I make them with fresh and they are fine. I haven't had to add any water at all, just corn or corn and flax seed and seasonings. The only problem I've had is sometimes the fresh corn will leave a bitter aftertaste.

I had mine in for about 24 hours on 105...if you have it higher, like 115 it will take less time. tat is why I didn't specify a temp or time in the recipe. just check on them and keep them in until they are crispy.

I've got 2 large sheets of this in the dehydrator right now. I set it at 115 degrees - is that too hot? I turned on the dehydrator around 5 pm this afternoon. Can you give me an idea of about how long these will take? I'm pretty new to this and have never made chips or crackers before.
harmonylia, I read in one of my raw food books (Rawvolution, I think) that for some reason, frozen corn works better than fresh for corn chips, and it recommended using frozen instead. I'm guessing that Aziah hit the nail on the head -- probably fresh has a higher water content.
