yellow pepper curry

serves 2-3This is my attempt at turning my favorite cooked vegan meal into a raw dinner. I tested it out on my husband this week and he loved it. I never measure when I’m cooking so I had to guess at the measurements.
Ingredients:
2 cup Brown rice, soak atleast 24 hours
2 tablespoon curry powder
2 tablespoon bragg's
aminos
2 tablespoon brown rice syrup or agave
dash crushed red pepper
1 teaspoon ginger
1 yellow pepper, diced
½ can lite coconut milk
½ teaspoon allspice
1 cup cilantro, roughly chopped
Preparation:
In blender:
combine coconut milk, curry powder, allspice, brown rice syrup, ginger, and bragg’s. then stir in a bit of crushed red pepper.
spoon rice into bowls, then top with yellow pepper and plenty of cilantro. Pour curry sauce over the top and enjoy.

This sounds so easy-soaking the brown rice is something I've never tried-but I will try that-cause I know brown rice is really good for you.

Sounds really good! Instead of using canned coconut milk, which is cooked to death, you can use raw, dried coconut meat soaked in water and then blenderized well. It makes a gorgeous coconut sauce base for curry. Thanks for the recipe!

Isn't the rice gonna be crunchy??

hey, this looks really yummy. fyi- canned coconut milk is not raw (things in cans aren't raw), but i bet you could use some coconut water (straight from a coconut--blended with the coconut meat to make it even creamier). yum!
