I know spring is comings but I just came up with a great salad made from local produce that keeps in the winter months. Its kinda like coleslaw. Tastes great to wrap some up in raw nori with sunflower seeds and some wasabi.
5 medium carrots, grated
1 medium beet, grated
1 a small piece of cabbage, grated
1 apples, sliced or grated
¼ cup raisins
¼ cup dried apples
Sprouts if you got 'em
Apple cider vinegar
1 cup Sunflower seeds, coarsely gorund
1 tablespoon tamari or nama shoyu
Raw nori for wraps
Grate, slice, toss, roll. You get the idea.
Experiment with different dressings…
I would omit the apple to make wraps so it’s properly combined.
