wild POMEGRANATE salad

Servings:
makes about 4-6 small but very filling servingsdivinely delish!
Ingredients:
2 cup wild rice, soaked 2+ days
1 pomegranate, seeded (of course > how silly!)
4 pears, ripe but firm > skinned and finely
chopped
1 red apple, firm and slightly tart > skinned and finely chopped
1 green onion, finely chopped
½ lemon, juice thereof :)
dash cinnamon, yum!
Preparation:
all ORGANIC of course!!! i imagine one could use a bit of freshly squeezed orange juice in lieu of lemon and achieve another fabulous taste. even fresh pineapple juice for our friends in hawaii :)
toss or mix depending on your specific style or approach to RAWly lightful living…enjoy!

I had a great salad with pomegrante at the raw spirit festival. In the past, whenever I had a pomegranate I could not eat the seeds. Can anyone tell me how to make the seeds edible? Do you soak them? I would LOVE to know as the season is coming to an end!! Thanks! :)
