This is a very rich, almost cream cheese style icing or spread for fruit. These measurements are rough, I just added everything to taste. I was very surprised at how much like real icing this tastes! Would be awesome on raw carrot cupcakes!

1 cup raw cashews (soaked)
1 tablespoon raw agave nectar
2 tablespoons raw cacao butter
Recipe Directions
1. Start by putting cashews in your food processor and blend until they start to get creamy.
2. Then add in your agave and cacao.

I had to double this as well to work well in my food processor- but the results were delicious!

ambiguous, I have a very small food proccesor(1 cup) so maybe that is why. I also had to scrape the sides every few pulses to get it to go.

That must be because I have such a small food chopper and I would imagine if you were trying to ice a cake or anything large you would need much much more!

It is also possible that I used more agave as I did not use measurements, it was a spur of the moment concoction!

OK, I tried to make this but one cup of cashews was not enough volume to blend in my vitamix--it just got chopped and then stuck to the sides. So I wound up adding water, which was still tasty but the end product was not really icing-like. I suspect doubling this recipe (or just the cashews?) might lead to better results . . .
