Very Berry Cheesecake
This very berry cheesecake is a recipe from Raw Soul in Harlem, New York, a down right incredible and delicious raw restaurant with a flare for southern spice and flavor but also a knack for creating wonderful treats, whatever they may be. I made my first one this week and have been trying to slowly enjoy it day-by-day (as well as passing it out to friends / neighbors) so as to not eat too many "unchewed" nuts. My 2 1/2 year likes the flavor, but not the texture, so he licks it! Too funny. Next time I make one I will try to post a picture. Also, it's sooo easy, it really only takes minutes (minus the freezing and soaking times, which aren't work anyway :)).
Crust:
2 C of walnuts, soaked and dehydrated (though, I did not dehydrate mine)
1 C of
raisins
1 t nutmeg
Filling:
4 C macadamia nuts, soaked
1.5 C coconut oil
1 C mixed
berries
1 C agave nectar
.75 C lemon juice
.75 C filtered water
4 T psyllium powder
2 t vanilla flavor /
extract
Topping:
.5 C mixed berries
12 pitted, soaked dates
Crust:
Process ingredients in food processor until they are uniform then line the bottom of a springform pan with plastic and spread the mix evenly over the bottom of the pan.
Filling:
Blend all ingredients until smooth, adding water as needed. Pour the mix atop the crust and freeze for 20 minutes
Topping:
Blend strained dates and berries until smooth. Once filling is set, spread the topping over the filling and freeze for 1 hour.
You'll then have an extremely yummy "cheese" cake for desert or breakfast, or any time of the day, really. It's soooo good.

That is interesting in not on the lists. It's close to one of the most famous in the city, despite it's very northern location. I think it's about 7 years old or so, so maybe it was created after you left. And yes, the recipe is good, REAL good. I hope you can try it, soon. It's very easy to make, but a price pricey with the macadamia nuts.
