Vegie Stir Fry

Appx 4 Personas Magnificos!

This is great if you miss stir fry. You add the “rice.” Or you could wrap it in the tortillas from this site for fajitas or tacos-or even put it over “noodles”.

Ingredients: 

3 carrots cut thinly and in half
1 onion sliced
1 red pepper sliced
3 zucchini
2 celery stalks, chopped
Sauce: 1 cup red pepper or plain olive oil, 2 tbs herbs de province, 2 tbs honey, 3 tbs agave, cayenne, salt, and pepper to taste
2 tablespoon braggs, braggs or shoyu-2 tbs
1 lemon, juiced
1 eggplant peeled and cubed
other spices for sauce- onion powder, garlic powder,and ginger if you like!

Preparation: 

Slice everything and marinate in sauce for a couple hours if possible. Place in dehydrator for appx 8 hours on 115. Enjoy!

I added sugar snap peas and dehydrated for 3 hours. What a tasty recipe! They're best when eaten warm out of the dehydrator.

We i cut up some oyster mushrooms and threw those in for an hour and had a "taste" ok, two tastes....well maybe a few bites ;) but its sooooo good!! im serving it with collard leaf wrapers and some ahi tuna for my man....vanilla ice cream for desert made of almond millk in the new ice cream maker...yay eggplant my fave, ive been making "bacon" out of it and living on blts lately!

Thanks Omshanti! I felt like I was cheating using some braggs and shoyu but I need to use them up and I was going for that stir fry flavor. It seems pretty normal to try something like this but I hadn't yet so I thought others might not have either. I really like the carrots that are dehydrated half way- a little crunchy- The egg plant was suprisingly good- it's my new meat substitute! Also add lime to the sauce- it's great!
